Bun quay (bún quậy): a delicious bowl and a dipping sauce of your own
Fresh rice noodles, hot broth, seafood and a sauce you mix yourself: bun quay (bún quậy) offers comforting flavour and the small pleasure of adjusting every bite to your taste.

A dish with a little part for the guest
With bun quay (bún quậy), give the dipping bowl some attention. The counter often offers salt, sugar, pepper, chilli and calamansi, or a prepared dipping-salt mixture to adjust. Add a little at a time and taste; when it suits you, you have made your own part of the meal.
For two people, mixing separate bowls and tasting each other's can be fun. One wants more calamansi, another concentrates on chilli. The same dish becomes two ways of eating. An island breakfast can begin with that small conversation before the noodles arrive.
Stir the mixture and taste again. Depending on what the restaurant prepares, the sauce may be thick and creamy orange. The dish's name, the way it is eaten and the guest's stirring all meet there. There is time to be curious, as well as to order and wait.

A freshly made bowl
Bun quay (bún quậy) uses fresh rice noodles pressed from rice dough in the kitchen. Shrimp, fish, minced squid, spring onion, coriander and hot broth are familiar parts of the bowl. The straightforward combination makes individual flavours easy to notice.
Try a spoonful of broth first. Seafood sweetness and pepper make the hot bowl inviting. Lift noodles and some seafood paste, dip into your mixture and taste. Calamansi brightens it, chilli adds heat and pepper brings aroma. The combination is particularly delicious when your sauce is just right.
Some people dip each bite separately; others add a little sauce to the bowl. Try the first bites to find your preference. Your companion's mixture may reveal that they like more heat or acidity than you do.
Shrimp, fish and squid are commonly mentioned ingredients. Tell the restaurant what you can eat and which serving you want. A delicious meal begins with a bowl suitable for the person eating it, even when two people order differently.

A breakfast with time to enjoy it
Dương Đông and the Bãi Trường area are suggested places to find bun quay (bún quậy). Choose somewhere currently serving and convenient for your accommodation, and allow time for breakfast. A day starting slightly later is a good chance to try something new.
While waiting, talk about today's route, another place to visit or yesterday's favourite picture. Once the bowl arrives, enjoy it hot. When one person finds a delicious bite, the other often wants to try, and the conversation turns naturally to food.
Bun quay (bún quậy) also offers the pleasure of finding a familiar breakfast place. Try it first; if you like it, return already knowing your order and sauce mixture. A breakfast address you enjoy makes island days more comfortable.
After eating, ask about the sauce if you want to remember its flavour. You might try it with noodles at home or describe it while sharing Phú Quốc gifts. A hot bowl and a sauce you made yourself can hold a special place in holiday memories.
